Hello, One Little Project readers! I’m Alicia from The Baker Upstairs, and I am so excited to be a new contributor here. If you can’t tell from my blog name, I am super into baking!It’s my favorite form of stress relief, and I bake something delicious at least twice a week. I bake most of my ownbread, as well as other staples like tortillas and even crackers, but I definitely have a sweet tooth, too. I love to bake cakes, tarts, pies, crumbles, you name it! My all-time favorite thing to bake, however, is cookies. I started baking cookies when I was aboutten, and haven’t stopped since.

Cookies are an ideal dessert – they come in individual serving sizes, they’re portable, and there are a million different variations, so they never get boring! These chocolate crinkle cookies are one of my favorite new cookie recipes. They’re rich and dark, soft and just slightly chewy, and perfect for satisfying those late night chocolate cravings. (Because we all get those, right?) They’re simple and quick to make (although you do need to allow a little time for them to chill) and easy enough that the kids can help too!

I first saw these delightful cookies on allrecipes.com, but decided to change up the recipe just a little to make them even more delicious and unique. The secret ingredient is cinnamon! I love that it addsa really nice rich flavor without being overpowering at all. Chocolate and cinnamon are a very underrated combination, and they are totally delicious together!

The full recipe is at the bottom of the post, but here’s what you’ll need:

  • cocoa powder
  • sugar
  • eggs
  • oil
  • vanilla
  • flour
  • salt
  • baking powder
  • cinnamon
  • powdered sugar

These cookies are so simple to make – you don’t even need a mixer! I mixed mine by hand with a rubber spatula, and it worked great. All of the ingredients combine into a rich and thick chocolate dough. Once your dough’s all mixed, you’ll pop it in the freezer for a couple of hours to let it firm up.

When the dough has chilled, pull it out of the freezer and roll it into one inch balls. The more chilled your dough is, the easier it will be to work with. I found that when mine had been out at room temperature for more than about ten or fifteen minutes, it got very soft and sticky. You may need to work in batches, chilling in between. I used a one tablespoon cookie scoop for my dough to get evenly sized balls, then rolled the scoops between my hands to round them.

After that, you’ll roll the dough in powdered sugar. Definitely don’t skip this step, because it gives the cookies those distinctive and beautiful crinkled tops! Be sure to give the cookies enough space on the baking sheet, because they will spread quite a bit.

They bake up nice and puffy in the oven, then flatten slightly as they cool. It’s a good idea to let them cool on the baking sheet for 5-10 minutes, so they will keep their shape when you transfer them to a cooling rack.

Once they’ve cooled down a little, dig in! These cookiestaste almost like a cross between a brownie and a cookie, and have so much dark chocolate flavor. The little hint of cinnamon pairs perfectly with the decadent chocolate flavor. These cookies would be wonderfulwith some warm cocoa or cold milk on the side!

Chocolate Crinkle Cookies

Instructions

  • In a large bowl, whisk together the sugar, cocoa powder, oil, and vanilla. Add the eggs one at a time, mixing well after each addition.

  • In a small bowl, whisk together the flour, salt, cinnamon, and baking powder. Add the dry ingredients to the wet ingredients and mix well.

  • Cover the dough with plastic wrap and freeze 1-2 hours, or until firm.

  • After the dough has chilled, preheat the oven to 350F and line two baking sheets with parchment or spray with cooking spray.

  • Scoop the dough into one inch balls and roll in powdered sugar. Place 1 1/2 inches apart on the prepared baking sheets.

  • Bake 11-12 minutes, or until the cookies are puffed up and cracked. Let cool on baking sheet 5-10 minutes before removing to a cooling rack.
